...a goat cut into three major parts and a chicken.
Got the smoker at 280F, used some dry rub on the goat and chicken then into the barrel.
Here they are before going in
It was a bit more fatty than beef but the mangowood gave it some great flavor.
...get stuff from Hawaii back to the mainland is to ship it using the USPS flat rate boxes. Way cheaper than paying for extra baggage fees through the airlines. That is how I shipped things when I lived there to the mainland. Also how I get my kiawe now. Pick up some mangowood while you're...
...(I use bird's eye chilly)4 table spoons grape vinegar
Mix everything over low heat; bring to boil then add the vinegar after all cools down a bit.
Just make sure you don't over smoke wings because you can easily go overboard, I used two pieces of mangowood each was 1"x10" long
Happy smoking
Hi! All just want to find out about some wood that I can get in great quantities down here.
I have read on many occasions that any fruit or nut tree is ok for smoking, does this include Mango and Guava?
Has anyone ever tried either of these woods?.
At present I'm using a wood called Rosewood...
Just wanted to share my smokes from this past Sunday... I made my own Maple Honey Bourbon injection and then used it on top of the turkey as well... SOOO good and my guests raved over it! The squash and poppers were equally delish!
I have an 18" WSM and the rest is history. This was my 4th...
I rarely take the bark off. Some wood I purposely leave it on for more flavor...
Kiawe? NEVER take the bark off!!!!! Guava? Nope! Coffee? No again!
Ohia? Yes I take it off because that is already a strong smoke flavor...
Mango and avocado I also always take the bark off of...
That's the way...

This weekend I wanted to cook something fun and interesting for the Scouts, I decided on Schwenking. I wanted to do BB Ribs but at $3.98 a pound for ribs, no way, I'll never eat ribs again for that price, then I thought hey maybe some bonesucking wing, Wings were $2.57 a pound, you know where...
Googling it up, may be just another post from one person's opinion and not backed up with scientific data. Fact is, you don't smoke with green wood. It's dry and no sap in the wood when we ship to the U.S. The USDA won't allow it. I have never seen a tree succome to disease here in Costa Rica. I...
So I did it with the beer can, used about 1/4 can of dr pepper as I usually don't drink beer and it seems in my area juice is only sold in bottles and not cans... had wanted to use a mango juice. Came out with a nice smokey flavour that wasn't overpowering, the meat was juicy and the skin was...
We are in Costa Rica and we export to the U.S. And have distributors in Florida and Texas of lump and chips of Costa Rican coffee wood. We also export macadamia wood and shells, mangowood and guava woods. All excellent for smoking. Create your own blend. Pm me for the info.
I've never heard of anyone spraying anything on a mango tree to produce fruit. Most trees here are wild and no one sprays or poisins or fertilizes them at all. Somehow they produce fruit all by themselves, most mangoes put out fruit every two years (they skip a year). My FIL has four mango trees...
I use guava all the time! It's VERY mild: chicken, fish and pork are okay with this; beef? You might as well throw it in the oven...
I've read it's similar to Apple wood. Yesterday I cut down two yellow cherry guavas and an apple guava...
As far as mango, I do have some that I'm...
Papaya is a very soft wood and not suitable for smoking. Guava is a good tropical wood (I've heard it's very similar to apple wood but I've never used apple wood so I don't know). I don't know what kind of trees you have there but I use kiawe (Hawaiian mesquite), guava, ohia and coffee wood a...
I mostly use four kinds of woods here: kiawe, coffee, guava (I have three varieties growing on my property) and ohia. A couple of weeks ago there was a county crew trimming trees back from the road in front of my FILs and I grabbed some avocado and mango to try.
Coffee and guava are okay...
