I've spent a fair amount of time perusing the forums over the past week, and have found the information here to be invaluable. I was trying to decide between purchasing the #8 LEM Big Bite and #8 Cabela's Carnivore meat grinders, when Academy made the decision for me with the current sale they...
Yes, it's super easy to reload a stuffer. I've got a 5# LEM stuffer and it works great. I only ever make batches less than 10 pounds, though. I used the Kitchenaid as my grinder for a long time and that works really well. You will eventually want a dedicated grinder, but it's not nearly as...
I bought my LEM #8 Big Bite grinder back at Thanksgiving on their Black Friday sale. I've always wanted a cuber, as some of us call them, for home use, but the Hobart 403 is $1500-$2500 USED! Not worth that kind of money for occasional use so I asked the forum for any experience with the LEM...
The LEM #12 is a beast!
The LEM ground meat packaging system is awesome!
Did ok stuffing from the grinder, but next time use the motorized stuffer.
Left some out for sausage gravy and biscuits tomorrow and vac sealed the rest.
I just stuffed a bunch of game bags with my LEM #12 grinder.
Worked ok, but next time the 5lb manual or the 20lb motorized stuffer depending on amount.
Don't give up yet....
Picked up 2 pork boneless butts at the commissary. About 16.75 pounds.
Time to break in the LEM #12 grinder.
Will package in game bags.
Get to try out the LEM tape machine as well.
Now, just need to settle on a recipe.
I have some AC Leggs seasoning I might try, or a "Jimmy Dean" clone recipe.
You can do that. LEM actually makes a horn that will only fit the grinder (not the stuffer) and it is like 2 1/4" in diameter and perfect for game bags.
Hi there and welcome!
I don't know if I have any vacseal meat last more than 2 years before it's eaten but I have no doubt it would be fine with my vac sealed results.
So like the others are reporting, you will seen no difference.
As for vac sealers I suggest getting a real one which will...
When LEM came out with the dual grinder head, I looked at them but decided against purchasing because they made one unit for both the #8 and #12 so basically, I would end up with the grinding capacity of a #8 grinder. Not what I wanted. Well after a ton of consumer feedback, looks like LEM...
Question- Getting prepared to make 20lbs breakfast sausage and stuff into 1lb game bags.
I have a LEM 5lb manual stuffer and a 20lb LEM motorized stuffer.
I was just wondering if I could stuff the bags using my new LEM #12 Big Bite grinder rather than the dedicated stuffers.
Less cleanup...
What a great run-down, very informative. It sounds really out of my league, so I guess, for myself, the LEMgrinder and Hakka stuffer that I already have will do. I agree with Ryan, you need one, and let us know how it works!
This thread inspired me to look into Meat Grinders for WAY too long last night hahahaa. If I upgrade I think I'll be doing a Weston Butcher Series #8 for more money than I would like to spend but hey it would be good to go AND can use my existing grinding plates and blades so I at least have...
...as good or better than whatever ther stuff in those tubes at the factory. This won't be an everday meat grinding for me, as I can see a LEMgrinder in my future.
The KA handled it well. one grind with "big" plate, the a second with the medium plate.
I can see this sausage in a batch of...
Hello all. I am new to the forum but have been having this trouble for years, maybe some have seen the same issues. I make large batches of certain meats. Lots of bologna and soppressetta each year, over 1000lbs. For years I have tried to make sticks with my stuffers and I have sealing...
ok... well, that was an ordeal. @SmokinEdge you were right... i shouldn't have gone with the smaller die. meat paste. and it was hard going the whole way -- the lem plunger isn't a snug fit, so it'd spooge out the side then create air pockets... oh well. live and learn. and my parents...
