Emulsified some of Jeff's rub into the brine and then I'll coat them in rub before smoking.
Pic is of my modified ECB.
Question - should I oil the theighs before applying the rub?
In a couple of weekends, the Brinkmann Smoke n Grill (ECB) should be modded and ready for it's first real cook. We'll probably do chicken and/or turkey breast over some apple chunks.
What I can't figure out from reading and searching is what to put in the water pan. I've seen everything from...

Both units have the same lack of air flow around the charcoal pan. As well as not being air tight above the charcoal pan.

It has a very good price point and may be a terrific source for ECB replacement parts. However I didn't really see the dimensions. Is it a 14", 18" or 22"? It's definitely worth looking into a little more closely just not for the lower section.

Ive been lurking for awhile. Just threw together my first modified ECB with a smokey joy as the charcoal pan. Prior to this I had only smoked on a larger level with a southern pride, and homemade smokers made out of reused 500 and 1000 gallon Propane tanks (I didnt build them).
Timing is everything... First winter smoke (ever) for me is tomorrow. Doing the buttermilk brined turkey thighs using Jeffs rub on my modified ECB -brinkman. Anyway, like you I was looking to see if there was any info on time adjustments for smoking in 10-20 degree weather. Normally I'd guess...
Here is a cheap way to get the ham hanging and the cold smoke going.
Got the rain or snow falling on the ECB? No problemo! Use your chimney starter and a bucket or extra Weber lid for an umbrella.. keeping that top vent nice and dry.

I have a Master Forge Bullet, ECB basically, so I don't think I have the room to spatchcock. In the past I stood the bird up with a Foster can, which I plan to do again this year. But I've only done one, so I want to make sure to get it right.

Looks like you don't have a vent on top.. You did the lid sealing mod and the legs on the outside mod... No vent?

Poor ECB ,
I bought the ECB (El Cheapo Brinkmann) some fresh charcoals and Apple chunks today. I bought a nice thick English cut Beef roast so the ECB can get some all day winter action Saturday.
Should be great fun in the 10 ,inches of fresh snow and temps in the teens.

I'm putting together a MWSM as an upgrade to the ECB that got me hooked on smoking this summer. Something larger is in the future.
