Thanks. I've got them rubbed and resting in the fridge, so a roll may be in order in the morning.

Weber grill pan doesn't fir in the WSM 18"

On my gas grill I do a meat loaf on a cedar plank, so that's for this, and fish. I need to bend the sides and arms.

Weber grill pan doesn't fir in the WSM 18"

I have one of these () and it doesn't fit on the grill due to the sides. I'm thinking I could bend the sides so they're 90 degrees from the base. Is this possible without wrecking it?

Cooking rib on the WSM 18

How folks been arrange two rack on the 18" WSM? I had thought about a rack per cooking grill, but that could get awkward. I have a standing rib holder I've used on my gas grill but I'm not sure it's the best method. And I'm getting the ribs from Costco, so I'm sure they're going to be bigger...

    Using cedar in my WSM

I know people use cedar planks for fish and other items, but could we use cedar chunks? And, could I use cedar from a tree i cut down this year? I imagine the wood needs to dry to ensure there isn't any sap.

    My first smoke.

I bought an 18" WSM, order a replacement top thermometer, and dual probe thermometer. I'm planning on cooking a top sirloin oven roast, can't recall the weight, but at about 225F, rough how long per pound? I'm just wondering if I need to start this Friday night, or really early Saturday morning...

Need help choosing the best smoker

I was looking at the Broil King chest smoker. I have a Broil King gas BBQ that's great. I ended up with the Weber 18" smoky mountain. There just seemed to be more reviews and how-to videos.

Replacement lid thermometor for the 18" Weber SMG

I just bought the smoker, today in fact, but part of my research was the thermostat. I've seen various videos and posts on these, but was wondering what people here did. I'm eyeing this one: Cheers!

    Hello from Kitchener!

I thought I had posted earlier, but I can't see it, so here goes. I had an 18" Weber Smokey Mountain on order from Amazon, but I couldn't wait. So I cancelled that, went to the local BBQ store, bought one, and now I've got it all put together and lit. Not going to cook anything today, but I...
