An update on yesterday's smoke of pork ribs, tried different rubs on each rack, spritz with apple cider and bourbon, smoked with bourbon chips, total of four hours with the last hour foiled. Must have a non discriminating palette as we couldn't taste much difference between racks. Enjoyed eating...

Bought this two weeks ago along with the cold smoker attachment, seasoned, and have actually despite the week of rain been able to do three runs..first two were using pork sirloin...figured a cheap cut = a less expensive lesson. First smoke, turned out without much flavor. Second attempt, same...
What's the advantage of the extension from the cold smoker? Allowing additional cooling?
One disadvantage to a chimney I've found is condensation in the pipe running back into the smoker instead of allowing it to dissipate.

A pause in the rain this morning..got 12' of coverlite clear polycarbonate roofing put up. Hopefully this will give me enough shelter so i can smoke in the rain..got rain forecast til Sunday.
