When I lived up in the Twin Cities, you could buy them whole, with heads on and guts included. I couldn't figure out why anyone would buy them that way until someone told me some people actually fried them (and ate them) that way! I don't think I could do that!Yes all you do is gut them and deep fry them, very nice snack. I have also smoked them but I prefer them deep fried.
I'll also add, my grandpa called them schmelt, not smelt. I'm not sure if that was his German heritage showing or if a lot of people pronounced it that way.
