I received the WSM 22.5 on Friday for an early FIRST fathers day (son is 2 1/2 months old) from my wife!
I trimmed the spare ribs down this morning (forgot last night) and rubbed them, left in fridge for 5-6 hours. They were smoked at 220-240 using a modified 3 - 2- 1 method. I did 3.5 - 1 - 1.5 . I added apple juice, honey, brown sugar, and margarine when I foiled them and glazed with Sweet Baby Rays. They turned out extremely delicious but I think next time I will leave them in the foil a little longer.
