We haven't made any racks of ribs seems like for 5-6 months I guess ... ran across some nice St Louis style today at local butcher shop and will smoke them 3-2-1 and 3 - 3 style on some kraut ... using Kingsford and hickory with my rub .. just firing up smoker right now..

also a few burgers on the smoker for lunch ... angus beef burgers with bacon and cheddar mixed up


just about to put all on, waiting on temperature only at 190 ...

Figured what's ribs without beans ?? decided to make a batch of griz's beans ... but didn't have any bacon thawed out, so put Canadian bacon on top, and didn't have Lima beans, so added a can of pinto's ...

I have some spareribs here I got $1.99 a lb. Some St. Louis cut $2.49 and baby backs are $2.99 . Just one of each. I was going to do some tomorrow but I took a brisket point out of the freezer instead.
 
Always have been redwood stained ... matter a fact, I am in the middle of hanging up al the stuff we took down with the hurricane ... I pressure washed it all top and bottom,and changing up the signs and everything a little .. when you buy things, and hang em up through the years, then when you have it all in boxes at one time.. you sorta change it up a bit

Burgers are done -- 165 internal, beans lookin good as well, flipped the bacon on top ...


we just are not ready to eat yet  ate a late brunch/breakfast ,....

Yeah, re-arrange, why not? I like the wood raised floor there.. like a deck. Neat!

It is a deck, that was the only thing there when I bought this smoker in 2014,  then added chargriller, then the carport over top,then water and electric, standard carport is 21 by 18, this 15 by 18 ... Carolina carports put it up in like 3 hrs and gone .. has 4 hurricane anchors down each side ...anchors that they use for mobile homes .. 
 
Well, going to foil 2 racks with kraut and bbq sauce and brown sugar .. then other rack will foil 2 hrs with bbq sauce and brown sugar then fire up charcoal grill for a 1 hr finish ...
 
Here we go, wrapped 2 racks with kraut the way we like e, the another will continue 2 hrs then finish on the chargriller for another hour with sauce ... take a look at we got goin on right now

Never heard of that. Bagged kraut from walmarts? And your smoker and set up is awesome. Enjoy learning about your style ribs too. Is it okay if I can try your receipt, and do ribs for my family?

You have to like Kraut to start .. just a large  can of silver floss kraut, drained ... and then add some brown sugar on it,  .. sprinkle it on , add a little bbq sauce ..  tis give the ribs alot of moisture like adding some apple juice ..  we just love Kraut .. and iit works  real nice ...
