I see you have a Fatboy smoker. I picked up a used one over the winter and am looking forward to trying it out. Any tips on how to set up the coals, how much etc... Damper settings? I'm planning on doing a brisket and want to try and hold the temp around 225/250. Thanks for any tips

I see you live in Sonoma, CA. Do you know how the Sonoma Cheese Factory is doing? I use to get the best seasoning in the world from them by the pound but they had some kind of family falling out and were closed for the longest time. I haven't been able to get it for a few years.

Since you live there it might be worth checking out. It was called OX Roast.
Wow, I can't remember exactly what the configuration was. That's probably how I did it.
There is a short in it somewhere, so at some point I'm going to have to take it apart to find it. I'll let you know what I find.

Need help. I am making a smoker and want to use a 220V ( 2100 Watts ) coil burner. I need a thermostat that can go from 120° -325°. No idea what to get and how to wire. Any help is greatly appreciated.
Good day sir - I have bought a twin to your old Coles meat grinder - I am in need of the retainer ring washer to hold everything together - did you have any luck finding parts for this grinder???

Was wondering how you like the Hardy backer lining your smoker? Any pros and cons? I was going to line mine with aluminum, but the $$$$!!! Thank you!
