Zucchini Crust Pizza

For a low carb pizza this was actually pretty good. Need work out a couple kinks but this will work. The recipes are not really clear about how much zucchini to use. I did end up having to eat with a fork which is a pet peeve of mine with pizza. You should be able to pick a piece up with your hand!

Looks tasty Brian. We’ve done cauliflower many times but never zuchinni. I assume you had to shred and squeeze out a lot of the water?

I have not tried the cauliflower. Put into towel and really worked at getting water out then dried for few minutes in oven. Can you send me that cheese cake recipe/ Looked really tasty.

Have done cauliflower crust, but never thought of zucchini!
Will have to give it a try, don’t mind eating it with a fork.
Did you put it in a food processor, then squeeze all the water out?

Used food processor with grating blade and kitchen towel. Basicly followed this recipe and doubled so can freeze one. Was not sure if it was 2.5 cups after drying or before? I ended up using 10 oz or 20 for doubled. Not sure if right or not.
