Knowing it was going to snow today I decided to do this yesterday.I hit it with some Kosmo's SPG the day before then wrapped in plastic for a nice rest in the fridge.This roast was just shy of 5lbs.

Got the MES going,set the Auber at 270 and used a half tube of whole pecan shell pellets in the mailbox,reason for using whole pellets was to maximize the smoke as this roast wasn't going to take long.I pulled it at 115° IT and it let it rest under foil while sides were made.Sides were sauteed fresh green beans in garlic and good 'ol mashed and gravy.The gravy was a combo of drippings and beef flavored Better Than Boullion as there just wasn't enough drippings.

After the sides were done I gave the roast a quick sear on the grill to crust it up.

Off the grill then sliced and plated.
