I took 2 big hams and 4 roasts out of the freezer Monday morning and stuck them in the spare fridge to thaw for a party saturday. They should be thawed by Saturday morning to go on the pit, right???
x2 Think of them as bags of ice. They will melt, eventually. But the more mass you have the longer it will take. Placing them in the kitchen fridge will make it happen a little quicker. The warmer masses in the fridge will suck out some of the temp of the frozen meat.It depends on the temp in your fridge and the size of the hams/roasts, if they're 18 pound hams and and big roasts and the fridge is set at 33-34 degrees it may be close (remember, that much frozen meat will bring down the temp in your fridge for a while)......I've found ice crystals in 22 lb turkeys that were in the fridge for a week.

Won't take to long with the cold water bath.Also if you check them about 3 hrs. before you need to start doing stuff, then if they are still a little frozen you can do the cold water bath thaw method for a while to finish up the thawing.
