I have a bullet electric brinkman. One pan of wood chips never seems to provide enough some. Any tips on how to increase smoke production? I hate to open the unit to reload ther tray.
 
I'd say open it up and reload. Don't overdue it, thin blue smoke is what you want.

I bet it can recover temps if you have to open it up, right? Give it a try, only draw back is that it will take longer to get to your finished product. Well worth the wait in my opinion.
