What's everyone using to smoke their turkeys with?  I see a lot of cherry being used in other posts.  I'm using apple.  What about you?

Straight pecan on my bird! One day I will get some apple, and give it a try.

I'll be using a mix of hickory chunks and apple chips.  Hoping my lead on pecan and some cherry works out but it won't be in time for tomorrow.  Used the hickory a couple weeks ago and the flavoring was good.

Ash (an olive family member) this year.  Fruit woods are great for poultry!

Apple (maybe with some hickory) but probably just straight apple.

If I brine the bird (Jeff's brine) do I need to season with a rub?  Wife always thinks I over season things.

Getting ready to start.  I am using a combination of Apple (1 1/2 handfuls) with Mesquite (1 handful) per foil packet.
