wood for pulled beef

got some suggestions on wood for pulled beef from my BFF Chef Jimmie but i'm curious what wood others have used for pulled beef with propane gas smoker - have apple hickory mesquite chips - oak logs i could cut for chunks - thanks for your help

I like hickory or mesquite chunks or Amazen pellets myself.  Your smoke/cook time is shortened because you're only going to 125° - 135° so I find I like a more flavorful wood vs milder.

haven't bought an amazen YET but think i soon will[-i'm a little confused about how you use it in a smoker when it says you can use it to 180 degrees

I personally love mesquite with beef, the just plain go together like Peanut Butter, Bacon, and Bananas... (just ask Elvis!)

There is a new product from A-MAZE-N called the tube smoker. It is supposed to work better with propane smokers at higher temps. I haven't tried it yet but others have.
