I'm using my GOSM propane smoker and have been having issues with my wood chunks flaring up and catching fire. This obviously produces a lot of smoke and seems to hinder the smoking/flavor of what i'm making. Is there anything I can do to prevent this? I tried foiling my wood tray and poking some holes but that seems to still flare up as well.
I don't soak the wood. I was thinking about setting the wood chip box on the side next to the flame, but will that be good enough to ignite the wood enough to produce the smoke?
