I have always had "issues" with my smoke and felt as though I was getting to much in my smoker. It would at times kind of billow out the door and vents. I had always picked up bags of "wood chunks" from Ace Hardware to use in my smoker. Yesterday, I picked up a large bag of hickory that was actually split logs maybe 18" long or so. I cut them into smaller pieces and placed one in my smoker box which I fired it up 2 1/2 hours ago. It started out as TBS and continues at this point with TBS. Maybe 1 hour ago I took tongs and turned it over. I think I have always been using pieces that were to small thus producing billowing smoke.
