Winter Cheese Time again in TX

Octoberfest sausage and cheese time is here again. I just finished a load of med cheddar, mild cheddar, pepper jack, Swiss, and Jarelsberg., smoked with pecan this time for 4 hr at around 65-70 degrees “cold smoke”.

Nice round. Love your prep area. I used to work for Square D back in the early 80's.
Was the Wurstfest logo created from your smiling face?

No time to smoke any cheese up here as the temps were well into the the 70's today.
Hoping to get some cool times in Florida to smoke a batch or two.
 
Wow! Nice cheese. This has been a crazy year in North Texas. The heat will just not go away! At least Lake Texoma finally stopped turning over and the river has cleared up.

Nice looking. But I always thought you needed, Pickled eggs, Pickled turkey gizzards, Pickled sausage, and townhouse club crackers with the cheese and beer (beer is ALWAYS a given). Maybe I am just that odd. And I like the beer logo, but do they let you wear those pants in Texas? (lmao) (they are cute, but not for me.)

I should have done some when the cooler air moved in 10 days ago, last weekend was too warm in North Texas. Looks like cooler weather is coming back, so time to smoke cheese for Holiday gifts.
