Got a full size aluminum foil pan full of trimmed wings. Poured a quart of Texas Pete sauce over them and a cup of Strawberry's BBQ rub. Mixed them up and folded them over in the pan for about 10 minutes to well covered. Covered with plastic wrap and put into the fridge to get happy. Question is do I smoke them and then deep fry to crisp up or just smoke till the skin is crisp?

You will need higher temps than smoking temps235 - 250  to crisp the wings. 350 - 375 deg.

We love our smo-fried wings here. Smoke till almost done then i dust w/ seasoned flour and deep fry .
