Will summer sausage be ok to mail ?

  1. Hey Y'all,

    I just completed my first batch of SS from start to finish. I think it came out very well and want to send some to friends and family but wondering if, even as it's cured ( #1) will it be ok un-fridged for 3-5 days in the mail ? Vac packed of course.

    Couldn't leave y'all hangin' without the Q View...

    Redneck foot switch for the grinder. Wanted 2 hands for stuffing....

    4 logs 3 lbs each. They were too long for my smoker so I cut them down to chubbies


    Started them in the oven on low for an hour, then an hour in oven at 150*, then into the smoker at about 175* to IT of 152* when I pulled them.  Very pleased with the end product.  Looking forward to the next batch and maybe some Hunter Sticks.

    Yes

    Properly cured SS is safe to mail. When my 2 sons were in Iraq and Afgn i mailed SS, Sticks and jerky to them often and they said it was great.

  8. Be happy to share outta the next batch PFB, PM me your addy if ya want. This batch is mostly spoke for already.

    I find that smoking meats, like brewing beer, it's almost impossible to stay ahead of the power curve of production vs consumption !

  10. Much appreciated Moon.  I'm very pleased with my first attempt.  Flavor is great, fat ratio perfect.  Think next batch I'll spice it a little more. This batch was very mild, no real kick, but the flavors did intensify as you eat it.

    Yes it is.. I home-brewed all grain and never seemed to have any in the kegerator for very long.. Same with bacon and pastrami..

    Let me know if you need anything out from Arizona way and maybe we can talk trade..
