I have this Capture.JPG smoker...

I've done the mods (legs, holes in charcoal pan, etc), got it washed out today and will season tomorrow.

I'll be using PAM...how "heavily" do I spray...a light coat or do I hose it down???

(sorry if this shouldn't have been posted here...but I was unsure of the best place).

First. I recommend a heat cycle to burn any oil and impurities from the manufacturing. Heat it above 400* for about 30 minutes. Then remove the cover and center collar to cool and prep with oil. Spray enough oil on the walls to coat well, but not so it drips and runs down the sides of the wall. I suggest wiping with a paper towel to coat all surfaces.
 
I'm not familiar with that smoker, but if it's coated steel, there is no need to season it.
Seasoning is only done on steel smokers to keep them from rusting.
I think all you need to do is heat it up & burn off any impurities from the manufacturing process & your good to go.
If it needs to be seasoned it should tell you that in the paperwork that came with the smoker.

I agree with Al. You may want to toss a chunk of wood in there also to see where it leaks.

It's not coated on the inside...bare steel (and I "do" intend to add some wood for smoke to check for leaks).

Mine had a bunch of sticky crap in it from the factory. In the lid also. Burned off what I could and I only put oil on the 2 cooking racks . I wipe the racks or spray them every time. They stay nice. Have fun! Good luck.

Well, "tomorrow" turned into 6 days later...

So I'm finally seasoning my smoker...YAY! Thing is, even though I tested the therm in boiling water and it appeared to be accurate, the temp diff between it and the Maverick was >40 degrees a few minutes ago.

I laid the probe on the top rack...is it more probable that the therm that came with the smoker is junk OR does the approximate 8" difference between the rack and the top of the lid where the therm is mounted account for THAT much of a difference?

Well, I went out to check the temps right after I posted the above and the Maverick was showing "HHH" instead of a temp.

Removed it, turned it off, let it cool to room temp, broke out the instructions...if I'm interpreting correctly, the error means either the max temp of 652 degrees was exceeded (OK...wow) OR the probe is damaged.

Thankfully, it's still working (showing a temp), so it looks like I didn't burn the thing up!

I know it doesn't matter during the initial seasoning if the temp gets that high, but I OBVIOUSLY used WAY too much charcoal in this thing (dumped 1/2 a chimney of coals into center, placed probably a chimney-full of UNLIT around the perimeter, and buried 4 baseball-sized chunks of hickory in that).

Gonna have to learn this thing, that's for sure!

ETA...instructions says the LCD will display temps from 16 UP TO 482 degrees...perhaps it DIDN'T get as hot as I thought...

Gonna be like :eek: before this is over...surely.

Well, I got it done and I'm not :eek: yet...threw a couple of baseball sized hickory chunks now and than to check for leakage and let it go until it cooled down.

It BARELY it leaked around the lid (haven't added the stove gasket yet), but there was quite a bit around the door. It's supposed to rain tomorrow, so I'll apply the gasket around the lid and the door.

According to my manual it just says to coat with oil to season it. I assume it would be recommended to do a burn off first?
