Whole turkey wings

hey there!
So I tried just the wing section of a turkey last week and cooked it too fast. Looked great but didn’t eat so well.
Soooo my birthday was on Thursday and Walmart had their whole turkey wings on sale for half off.

I cooked them at 225-250 the whole time for close to 2 hrs (minus about 30 min when I had to run to Walmart to refill my propane tank which had run out!)
Here’s a pic of the finished products. Ate the second one today and they came out much better. Probably could go 225 the whole time and smoke em a bit longer to get to perfect.
 
Thank you sir! They came out pretty good. I would probably cook them at a little lower temp next time for a bit longer.

Turkey wings or skin on small pieces of poultry are kind of tough to get a handle on.

If you want edible skin you cook at 325F or so BUT they cook sooooo fast!
If you want more smoke you cook lower but then you get leather skin.
You cant exactly pull off the skin on a wing so that option is out.

It is a conundrum for sure :)

This upcoming Sat I'm going to smoke some chicken wings.
I haven't decided if I'm going to smoke with no heat for about 2 hours and then pull them.
Next I would get the smoker up to temp and smoke them at 325F.

The other option is to just cold smoke them for a couple of hours and then throw them on the grill.

I haven't decided.

Anyhow, keep up the good work and making good looking turkey wings :)

Did 40lbs of chicken wings for the super bowl. They came out really nice. Probably have room for about 60lbs of Wings on my new smoker.
Had some leftovers but kids wanted some to take home.
I definitely prefer chicken wings over turkey wings. Wish they weren’t so expensive.
I cooked these about 2.5 hrs. Still learning smoker but used the hotter section by firebox to crisp up the skin a bit. Soooo good!
