Did these up today using plum wood and cooking at 225 then 250 as the pit warmed up. Chicken I brined then rinsed In the river with my helper. Chicken took 4 3/4 hours and ribs took 6.5. Chicken was good tender. I did put a little butter on these while cooking. They weren’t showing as much signs of far rendering as I like. One dose with the butter about half way through did the trick and they were good looking the entire time after that. I left the breast uncut and cut the back out. Maybe with the back in there’s more fat. I like it that way next time and cut the breast. But I was thinking the breast would cook slower this way and not over cook it and it worked perfect
Thanks! They were super tender! I tossed a split in the fire up before I left and ribs were at 189 and left them in the smoker, I was gone 2hours or so and they actually stayed in about 8 hours. When I came back smoker was at 150. Seems to work just fine. I’ve done this before because I was to tired to stay up any longer and ribs were about 10 degree away from done and I just loaded up the fb and went to bed. Woke up next morning and pulled them, they were some of my best!I think I got enough meat for the week and no need to smoke it up tomorrow, otherwise I’d like to try lamb shank.
Thanks guys!I’m doing a big rock fish today so look for that thread if u wanna see it. Did 1 SUPER good scallop too, it was 32$ a pound so I just got one and it only took about 30 minutes to cook but super good.
