I have a GOSM Big Block. The last 2 times I have smoked I get TBS for a little while and then all of a sudden it turns to thick white smoke. Temp is running 225* to 240* This is the normally where I run my temp. I have done nothing different, same wood etc. I pull the smoker box out dump the wood and start over with fresh wood and then the same thing all over again. Never had this problem before. Any suggestions/thoughts?

i have this prob from time to time
i use an ecb but bark on wood caused it also i started using smaller pieces

ive also found out that less is more for flavor

Now I have a GOSM and I absolute it for a couple of years and I have had some of the white smoke from time to time. Now I used to soak my wood for an hour or so and then put it into the smoker then I started to put it in the smoker dry and you get smoke quicker then soaked wood DAHH. now I use dry wood and it smokes alot at first and then if the temp is right it slows down very fast and then it's to the TBS that we are looking for. So just take it easy on the amount of wood you throw in the pan and you will have the thin blue that you are looking for.

I have the Big Block and use dry wood chunks in mine. I notice that I will "sometimes" get heave smoke just prior to when I need to add a new chunk of wood. My chunks rarely turn to ash, more like charcoal when I take them out to add a new one.
