Which starter culture?

I'm going to make a bunch of summer sausage and this time I'm going to try Len Poli's recipe instead of a kit.

The recipe says 1/4 tsp Starter Culture. I've been reading threads and am ordering other stuff from Sausage Maker right now and I don't know which one to order.

Thank you Martin! I guess it makes sense to use the faster acting formula to reduce the PH in the short few days in the refrigerator.
