Which safety limit rollout switch for my MES 40?

Hi, I like the KDS 301 style normally closed switch. I don't like the 150c temp. That is only a bit over 300f. My smoker would occasionally spike to that point before my PID was install;ed. I would look for a temp from 175c to 190. Remember the safety switch is for catastrophic purposes only. You do want to stay in the 350 to 390 range. Once again that is my opinion and others will have different ones
 
Does that allow the smoker to heat and cook above 275?
The foam insulation isn't designed for heat over 300 ish so it'll fry and get crunchy in the right rear corner where the element is and the back.

No, the limit switch is only a safety device to guard against a runaway condition. The max cooking temp is part of the MES controller internal programming. It can only be set for a maximum of 275 degrees. Anything much higher would be detrimental to the insulation and possibly unsafe.
Occasionally mine will overshoot to 300 or so on initial warm up but quickly settles in to set temp.
