Which casing to use

I am going to be making breakfast sausage, I have tried to use sheep casing but its a PIA. Will a 19mm clear collagen casing work for frying up breakfast sausage? Thanks

IMO, sheep casings are the best for breakfast links. What was the problem you had with them? I've used collagen but not a big fan. They're a bit too tough for me.

I like the sheep casings myself, but the Mrs isn't of fan of anything cased. A couple of weeks ago, I made some breakfast sausage that I just shot out of the stuffer into logs on to Q-mats without a casing at all and laid them into rows. Worked pretty good actually. A Jerky cannon would do the same thing a bit less clumsily. The collegen works obviously, but they do have a bit more "chew" than a natural casing.

I highly recommend reading this thread about handling and preparing casings. This was a game changer for me!
