Those in the business of raising only Purebred and Full-blood Wagyu in America have an extensive genetics tracking process that maintains the info for each animal including their ancestry. The meat from these cattle is not what most people have likely experienced as being labeled Wagyu. As I mentioned above, there is no governing of the Wagyu label. 50/50 bred Angus & Wagyu cattle meat is the most common and is simply labeled as Wagyu. This mixture is usually very good quality depending on how they were raised and finished before butchering. Comparing that to a same cut in Prime, for me is very similar in taste but definitely neither of them are in the same league with Purebred & Full-blood.
