This is a variation of a lettuce soup we cook often. Whey is an important component - I hesitated about putting the thread in the Cheese section...but since the whey is store bought...."nose to tail" is. I started with a pork spine bone. Cooked in the pressure cooker with vegs for 3h. Also tossed in some dried ends from a smoked coppa and some cooked bacon. Meat after picking the bone While i picked the bones i added the chopped lettuce to the stock. Whey I usually start with as little water as possible for stock , but i only found one bottle of whey...so had to make more stock. I used more yoghurt for the same reason (tempered). Here it is Well past the soup time today...but i had to have a taste Very refreshing...tomorrow will taste even better.
