Whey and lettuce bone stock with smoked dried meats

    This is a variation of a lettuce soup we cook often.

    Whey is an important component - I hesitated about putting the thread in the Cheese section...but since the whey is store bought...."nose to tail" is.

    I started with a pork spine bone. Cooked in the pressure cooker with vegs for 3h. Also tossed in some dried ends from a smoked coppa and some cooked bacon.

    While i picked the bones i added the chopped lettuce to the stock.


    I usually start with as little water as possible for stock , but i only found one bottle of whey...so had to make more stock. I used more yoghurt for the same reason (tempered).

    Well past the soup time today...but i had to have a taste

    Very refreshing...tomorrow will taste even better.

    After making lots of cheese I really need to start collecting the whey. I know its and excellent plant food and a great substitute for water when making bread dough. The soup sounds great and would be a welcome use of whey in the winter months when plants are dormant and the cold makes a warm bowl of soup a great comfort.

    The best use of whey (after cooking with it) if you ask me is pig feed.
