Just say NO to Waygu!  We got a local BBQ place that puts out some great, actually awesome brisket, and I felt like paying $12 per pound for sliced brisket was way too much!  Wow.  Thanks for the info Spool.  What is the market for that high priced meat?  Besides Myron and Tuffy?

Myron Mixon - the guy who's won almost a million dollars in contests, LOL.  I think he can afford that kind of money.  Not here, sorry.

My Sams here in Topeka usually has bigger packers (15-17 lbs) in the cooler case.  I have seen packers in all of the Sams that I have been to here in Kansas (Topeka, Salina, Lenexa, Overland Park).  They do vary in size though I have seen them as small as 12lbs all the way up to 18 lbs.  Sams is where I typically get all of my meat to cook with.

As far as I Wagyu, I know a couple of Comp teams that usually fair pretty well in briskett at comps, at one time or another they have both tried Wagyu more than once.  They both placed consistently worse with it....go figure.  They both went back to their regular ole' brisky's.
