Since my brain surgery last week (I have downtime to kill while recovering) I have been smoking up everything I can get my hands on, doing some for my cousin's catering, doing some for neighbors, and some for myself. Did Turkey, Steelhead and delicious sliders yesterday....now it's not even 4am and I am going out to clean the Traeger up and get ready to toss a brisket on for the day. Will post some Qview later, when there is daylight. Sleep is overrated.

LOL!!! Glad you pulled through surgery like a diesel! It is pretty amazing how a guy will search for things to smoke when time permits...

Heh-heh-heh, got an all-nighter about 2/3 finished right now...full packer brisket here, too. I feel like my eyelids are about 8 hours overdue for inspection...other than that, I feel great!

Good luck on recovery, and smokin' as well!

Eric

We were talking around the lunch table tonight and the subject came up of picking up one of the huge rolls of unsliced Bologna taking the casing off of it and then smoking it for a coupe hours.. I may run down to my local butcher and see what it would cost..

Getting a nice nip in the air here in Florida......so Chili.

Snow! but I'm thinking about getting the weedburner fired up.

I'm not real sure whats up for this weekend either it's smoking somethig or make more sausage from some just found venison meat already ground up and frozen.

today, nothing.....did 2 butts lastnight for PP sliders w/ homeade sauce for a party tonight. tomorrow i will do 2 butts achiote style for tacos for my girlfriend's work party. glad here around tamale time you can get butts @ $.88 all month long!

Tomorrow I'm doing 6lb tenderloin w/ mojo, normalized sweet potatoes and bacon with asparagus spears, all on the grill. Heading to Home Depot now for an expandable cast iron sear rack.

I dont know if I'm gonna fire up the smoker today. I'm not gonna lie, I haven't for about 2 months, extremely busy with school(18.5hrs) and work. I just got done with my finals this last week, I had 7

.

But we did have a nice shrimp boil last week. About 20people came over. We used one of those turkey fryer pots. Must have had 30lbs of food. I also grilled up about 4lbs of wings, which were gone in about 5minutes. Then everyone got drunk and we had our usually college shenanigans

. I'm thinking of throwing a slab of BBs on, if it warms up any. Its about 35*F at the moment. If nothing else, wings again! I hope to be rollin smoke most of this winter break now that I got time!

Couple of shots, temp is at 118 just hangin on smoke setting for now, will bump it up in a little bit to 225 on the digital (Traeger 075)

Got a 6# pork loin going and a fatty. Hope to be eating both this evening while watching the Cowboys/Saints game.

Hey Gunner... bologna is pretty cheap, but an easy and tasty smoke. Give it a try... slap a thick slice on a bun with some sauce. Good and simple.

Chubs... good luck on the fattys. You'll be hooked.

well gents, I have a few venison back straps with a green marinade, wrapped in bacon ( Im in Canada so the Canadian Bacon haha) then a sweet and smokey rub on one and a coffee cardamom rub on the others. this is my first try at venison. its minus 5 celsius right now so keeping smoker temp up is a pain. but its all good.
if this works out then I have a HUGE roast to do for the guys at the firehall next week.
Ill keep it posted

A couple spiral cut hams, experimenting with some boneless buffalo chicken strips, and in a few minutes some mild cheddar.

Brrrrrr! Man you guys need some sunshine!

Taken from the deck on top of my house looking towards Moorea , Tahiti's sister island, sorry no coconut trees, just telephone lines.

Tonight I'm grilling some wings, Larry Wolf's Sriracha recipe, but this time I'm using peach jam, with bacon wrapped corn on the cob.
