Ended up using the beer can chicken rack and I wasn't happy at all. I knew I should have spatchcocked it like the last one. Took forever and I couldn't get it to fully cook. The brine was amazing though! I used two chunks of apple and a chunk of Pecan and think I nailed a flavor were all happy with!
