Hello everyone. Happy holidays!

This year i wanted to smoke a whole duck on my GMG pellet grill for Thanksgiving, and being relatively new at smoking have not yet smoked any poultry (mostly just beef and pork and some salmon).

That being said, Duck confuses me somewhat, Its poultry, but the meat is red. My plan was to use an Apple/Peacan or Apple/Cherry or Maple and one of the others. This is what i have at the moment.

I would appreciate any recomendations or suggestions. Thanks in advance!

I like fruit woods like apple, cherry, maple, mullberry, fig....even orange wood is good. Especially if you plan on doing a sweet glaze.

Your chosen wood combos will work great!

Iv'e used maple before on turkey breasts. It gives a hint of sweetness if that is what you're after.
