What to use for interior smokehouse walls

I posted earlier about using OSB for interior walls but maybe I should have been more general. I'm building a 6x8 smokehouse and don't plan on temps over 180. Will half inch oak or birch plywood work for the interior walls. I looked at T&G pine boards at Home Depot but that would cost a fortune. Anyone use plywood? How has it held up?
 
K, morning and welcome to the forum....  I am planning on using sheet metal roofing to line the next smokehouse I build.... I recently re roofed my home and I have weathered panels that need a new home...  I figure the price per sq ft for used or new panels is pretty good and there is a fair amount of fire proofing to be had using it..... I have read up on finishes for roofing and it seems the thickness is 0.001 inches or less.... ain't much there to worry about..... 

In the event there is a fire in the smokehouse, there will be toxic stuff emitted from the finish which will not be a problem, for the food in it, because it will be burned up anyway and the roofing should stop the fire from spreading...  

My old smokehouse was built from used cedar fence boards my neighbor took down.... a few flare ups have charred them but I was always close by to put the fire out....   that is why I'm choosing steel painted panels....  

If you choose plywood, I don't think there will be a problem with fumes or fire....  It's pretty hard to get plywood to burn...
