What to smoke this weekend?

I've been smoking quite a bit lately and I told my wife I'd hold off until we get it all eaten. She didn't believe me and she was right! I want to smoke something this weekend. I've been filling the smoker up when I smoke; I figure if I'm burning fuel it should be full.

I have a bunch smoked in the freezer already:

Pulled pork butt
Chicken
Sausages
Spare Ribs
Whiting filets

I don't want to smoke a bunch of stuff I already have. I'll do some ABT's and a fatty for sure, but I'd like suggestions on something else to try. I don't have time this weekend for a 15 hour smoke, but a nice 6-8 hour would be fine.

Try some candian bacon with Tender cure or buckboard bacon. It will take a few days to cure, but will open your horisons to smoking. Or a corned beef smoked which is Pastramie. Good luck.
 
Ron gave ya some good suggestions, especially the pastrami one, you start smoking your own pastrami you will never buy it at the deli again.
You could also do a chuckie, they are delicious seasoned, smoked and shredded.
Another personal favorite of mine is to wrap pepper shooters (provolone wrapped in proscuitto and stuffed inside a cherry pepper marinated in oil) wrapped in sausage...So good.
Another quick one I have always liked is to wrap a pierogi in bacon and smoke it, might sound a bit strange but they sure are good!
 
I really like the idea of smoking my pastrami.....and the peppers sound good to. I'll do a little research tonight. Thanks!
 
I vote for the pastrami you cann't go wrong at all.
 
To make the pastrami, just pick up some corned beef (in a can?) and smoke it?? I have pastrami all the time, but I've never thought through the process.

I think I've decided what to smoke. I've got some extra chuck roasts, so I'm going to make pulled beef with one and cut another up to make kabobs. I'll throw on a chick (hard to smoke and not have a chicken on), a brisket flat, a fattie, some ABT's, beef roast, beef kabobs, and the pastrami.
 
Sounds like you caught the good bug!

well, i'll tell ya what i'm smoking:

my first brisket
some wings
a couple of fatties
a couple of hamburg fatties for smoked chili
stuffed jalapenos
chicken for gumbo

that about covers it. i'll either be using hickory or jack daniel's oak.
 
I'm doing:

Brisket
Almonds
Cashews
ABT's
Bratty

and a buddy is doing 3 slabs of ribs all for our Super Bowl party, now for the weather to cooperate....
 
I ended up with a pretty full smoker thanks for the suggestions.

Here's the lineup:

1. Chuck-roast kabobs
2. Brisket flat
3. Pastrami (first try wish me luck)
4. Pulled Beef chuck roast
5. ABT's
6. Country style ribs.
7. Chicken
8. Fattie

I put the briskets and chuck roast on first thing in the morning and added the kabobs and abt's a little later. We had the kabobs with some abt's for lunch (they were awesome). After lunch I threw on the fattie, chicken, and chuck roast. The briskets and roast are sitting in towels now and we should have the rest done in time for supper.

thanks for the suggestions guys! I think I really am going to have to take a break for a couple weeks, tooooooo much leftovers clogging up the fridge and freezer.
 
I hear ya on the leftovers. My wife will only eat the ABT's and Chickens I make, so if I do up a shoulder, brisket, whatever I always end up with some packed up and in the freezer. Got a deep freeze for christmas, and boy is it worth it!
 
We got a chest freezer a few years ago the first time we bought a side of beef. Now we use it for making huge amounts of food on cooking weekends and defrosting quick meals when busy. My wife also find good deals and buy a bunch to save money. We have to go on a 'freezer diet' for about a month to make room before we buy another side.
 
LOL...I'm TRYING to do get to that point!!!

Ours is a chest as well...not a huge one, but really more than enough for just the 2 of us, and when my son starts eating things that we eat, it will still be enough. I'm trying to convince her that we need to "stock up" on briskets, butts, and ribs, but no dice so far. As soon as I find a great deal....
 
My boy (4) really helps knock out the leftovers. He just loves meat like his pa. He calls all non-ground meat steak. Had ribs the other day and he asked for more steak. I told him we didn't cook steak and he responded "the give me the steak with the bone!"
 
I got to taste the pastrami yesterday and it was awesome! Small slices with cheddar cheese were great snacks for the game. Some of the research I did indicated it would taste better if I let it sit for two days after smoking so that's what I did. I don't know if that was necessary or not.
