I need some ideas on what to smoke for our office christmas party. they are requesting i bring something smoked since i smoked a deer for them a moth ago. There will be ham here already so that might be out. Something fairly quick and easy. I was thinking a few fatty's but I want some more ideas. I guess it doesn't have to be quick because i might be able to smoke it at work on Wednesday. so... what do you think.

Thanks for the info before hand.

We smoke turkey breasts that are already formed like a sandwich shop would use. A slicer to cut them to a nice even slice is recommended.

Well, if you have the time this weekend, smoke up a pork butt or shoulder (or two) ahead of time, pull it and put it in the fridge until the party, then reheat in a large crock pot or two... Pulled pork sammies are a must at a gathering!

I've done chicken drum sticks. Smoke for about 2 hours or until they come close to temp. Then move them to the hot side until the skin crisps a bit. Then mop all sides with a mixture of bull's eye sauce and honey that has been simmering in the smoker on a pan for 20-30 minutes; repeat about every 15 minutes until you think they look sticky enough.

Wings would work too, but drumsticks are cheaper and have more meat; which is better for smoking.

Around this time of year I find that smoked duck or goose goes over pretty good. Depending on how many people you're looking to feed you might a couple of them though as there's not a whole lot of meat on them.

My recipe is a little time consuming though and starts the night before with brining them.

Fattys

ABTs

Dutch's Wicked Beans

Chili

Cheese

Anything I'm sure will be a big hit.

Oooo... I forgot about the beans. Yea, that would be great for the office because you could smoke them a couple of days before as they actually get better overnight (although, they never seem to last that long in my house!). They reheat well in a crock pot too.

ok, thanks for the info, that's why i love this place. People always willing to help. THANKS

I like the idea of sholder, I just don't know if I will have time. Supposed to snow and be very windy also. Dutchs beans might be perfect along with a fatty or two.

Thanks for all the info. i'll keeps checking back if more ideas float in.

How many do you have to feed? I would do Dutch's beans, some ABTs, a few fattys, and a brisket or 2- depending on how many people we are talking about eating. Have you tried SoFlaQuer's chili verde yet? It is awesome. I made a batch of it for a chili cook-off at work. I used about 5-lbs of smoked beef shoulder in it.

For our Christmas party potluck, I did a brisket and 50 abt's. I talked the boss into letting me work from home the day before and smoked all day. I sliced up the brisket the night before, put the brisket and abt's in a ziplock container(s) and off to work I went. I now have orders for 3 more briskets (whenever I happen to be doing one for myself :) ) and EVERYONE wanted to know how to do the abt's.

There is only 10 here in our area. Everyone else is bringing stuff also. So it's not going to be much. i'm thinking dutches baked beans and fatty and maybe some ABT's.

Once again, thanks for all the help.

I should have asked to work from home as well. I smoked two pork butts for the office 'ethnic food' potluck (Is smoked food ethnic? I have no idea) starting at 3pm yesterday. (showed wife how to put them in) So I had a long night getting them done. Foiled at 160 (8.5-9 hr) and got them to 197 at 14 hrs. (both 7.5-8 lb) I let them sit in a cooler for an hr, pulled and added SFQ's finishing sauce.

Co-workers loved it. Thanks SMF.
