hi guys

i have just finished my first uds and i will be firing it up this weekend is it best to fill the basket with charcoal and put lit charcoal on top or do i pile charcoal around a tube in the center of the basket and fill the tube with hot coals and then take the tube out i have seen both used but i wondered what you guys think

I fill the basket and take my weed burner and hold it in the center of the coals for about 30 sec. I am
using Royal Oak Lump so I get a quick start. I stopped with all the formalities a while ago - I'm keeping it simple.
I get fantastic results with my fire management.

thanks guys

i think i will try different methods and find out what suits my smoker best i am giving it a seasoning on saturday afternoom and i will try the minion method and see how it goes and i am cooking chicken on sunday i will try pulled pork soon but i want to learn how my smoker behaves as i have only ever used a 18 inch weber kettle and grill type bbq's before .i have to admit i am fascinated with the low and slow concept of barbecueing
