I am doing a Fund raiser for a local Church that cooks Breakfast every Sunday morning to feed the less fortunate in their community. And launching my new cooking name. A way to advertise when I am doing a cook and maybe someday do some competition cooking. I'm going with the name Station #9 BBQ. As of right now I have 20 Boston Butts and 21 St Louis ribs to cook. Hope everyone has a good 4th of July.
 
Good luck with your cook! I'll be doing a brisket a day or two ahead of the 4th and probably just the traditional hotdogs and burgers on the 4th so we can maximize our boat time! Next week is my favorite week of the year.
 
Wow, that's a lot of food! I don't know what I'm cook'n. Too many choices in the freezer to decide.
 
I'm doing my first ever whole pig. It's 47 lbs and already delivered to local store and thawing. Will pick it up the day before and prep it for a late over night smoke on my RecTeq.

My plan is to put it on around 10 pm and smoke around 200 degrees. Gonna pull membrane off rib sections and score the shoulders and thighs. I haven't decided whether I'm going to inject but I'm leaning towards yes.

When I get up in the morning I want to flip it on it's back and then start mopping it with this really good recipe I've used from a guy that won one of those BBQ shows.

I've been watching videos and trying to take mental notes so hopefully everything turns out really good. I'm open for any and all tips or lessons learned.

Oh I'm also doing a pan of smoked bacon mac n cheese I'm pretty sure I got from here. Done it so many times, it's always a hit.

Want to do some sort of cold pasta dish as well.

Oh and a big cooler of ice cold brew!!

4 July is my bday so I like to do it up as much as I can!!!
 
Actually having the cookout on the 3rd since we'll be at Mid-Ohio for the Indy car races the 4th and 5th. I've invited a few (5) people over so this will be my first smoke for others than myself and my GF. Will smoke a meatloaf, brats, and probably some chicken. GF is in charge of sides.
