What is Bar B que Pork made out of,

Can anybody tell me what type of meat is used to make the bar b qued pork like the stuff served in Chinese restraunts?

If anybody has recipes, I would love to get a recipe for Bar B Qued, Chinese style pork.

I have seen it made (and made it) from pork butt, pork loin, and pork tenderloin.

I think it's pork.

I live to be helpful!!  Sorry, couldn't resist.  I haven't a clue, though I'd bet it's from a cut higher on the hog.  The stuff I've had is typically leaner.
