What I made with some frozen SMOKED TURKEY

Well the wife and I didn't take out anything for dinner, I guess we forgot because were being entertained by our 22 month old grandaughter counting to ten (except for the Five). So I went into the freezer and looked, and had either pulled pork or smoked turkey. I had came across a recipe a few years ago on a recipe site I had belonged to, called BIERROCKS. I think I had posted it before on here. The original recipe calls for either shredded chuck or ground beef mixed with fried cabbage and onions. But over the last few years have been experimenting with different ingredients. Like corned beef with sour kraut and swiss or sausage and peppers and onions. I was gonna used pulled pork, maybe next time. So anyway I made a homeade bread dough, you could use frozen or your favorite bread recipe and while it was rising I carmelized some onion and garlic in real butter seasoned with rub.



And set out the smoked turkey to warm up a bit.




After the dough has risen, I take a 1/3 measuring cup and scoop out some dough ( letting it heap just a little and use the heel of my hand to cut it off, flatten out a bit and roll into a 6 to 8 inch circle sorta.






And place on 1/2 the circle some smoked turkey, carmalized onions & garlic seasoned with rub and some shredded chedder cheese.




Fold the dough over and pinch to seal. You can wet the edges with water if your dough is on the dry side to help seal it. And with a fork poke some vent holes in the top.







Place on a baking sheet and bake for 25 to 30 minutes at 350*





The possibilitis are endless as to the ingredients you can add to these, I would of put mushrooms in there if I had some. As soon as I put them in the oven and was cleaning up I seen this out the kitchen window. By the way they were terrific. Pulled pork next time around. I still like the corned beef,sour kraut and swiss with a mayo and horseradish sauce. These I used BBQ sauce

Real Yummy! I haven't had much luck making calzone style meals( tried twice), but maybe I am not rolling my pizza dough thin enough or possibly putting too much filling. Here's my problem, My dough doesn't crisp up enough on calzones. I do a lot of pizza and usually blast em at 525 for 6.5 minutes---what can i do to get your results on the calzones?
