What goes where?

I can't seem to find a thread that states the obvious. "How to actually start the fuel?" and "Where the wood goes?"

I have the Brinkman side smoker and have started BBQing with it and want to smoke some ribs tomorrow.

I know what the side burner is for.. but not how to use it.

Do I start the coals in the pan (on the lower rack) then put the wood above the coals (on the upper rack) or acually IN the coals?

May sound like basic stuff but those are the hardest questions to ask sometimes.

start by getting a charcoal chimney ,light coals til they are white hot ,place on fire grate and add wood to the top of the coals, little at a time using wood to replace the charcoal. Add a bit of wood when your grill level temp. starts to lower. Patience...

And away we go.. Read a little about the Brinkman and got it about 2/3rds sealed.. But I'm too hungry to wait!

Okay.. it's been a little longer than an hour.. I went with the chips to start and liked where the mesquite chips went. (Nice thin blue pretty quick) but lots of refilling the firebox (because they're chips right?).

Then I went to use the apple chips I had also bought to finish up and I guess they needed to be dried a bit because I got a long, yellow, thick smoke and hardly any thin blue (smelled good tho..)

I have just set up some coals to finish the ribs off.

Okay.. So they say never invite anyone to your first smoke.. Now I KNOW why.

I'm finishing these baby's off with some indirect as I write this. We sampled a piece and it was oh so sarap! (tagaolog for Yummy!)

 Very tangy and I'm mad I didn't start doing this years ago!
