What flavor smoke?

I saw this thread today about making jerky with corned beef and said "I just have to do this" so i picked up 2 corned beef flats today. I trimmed all the fat off and they are resting in cold clean water right now desalinating.
Since Todd has been having these sales lately I just can't resist so I now have 10 flavors of pellets which makes it very hard to decide which flavor to use.
So I am coming to all of you here, What flavor should I use for this corned beef jerky?

That sounds very interesting Dave. I'll be watching this one for sure. As for what flavor, it looks like you have all he offers...Hmmm, that's a toughie. I'd try maybe Oak or some PMC. I just picked up 2 flats as well. Just can't resist a good sale. Was going to do some 'strami but maybe I'll be doing both. Looking forward to the Q-view.

I have never made jerky with corn beef, but I am a big fan of Alder, let us know know it turns out. Bruce

It came out very good, tastes like pastrami. I would never have thought of doing this if it wasn't for Navigator's thread on it.
