What do you do with left over Boston Butt?

+1 for vacuum sealing and freezing.  If I reheat in a hot water bath, it tastes just as good as it did on the first day . .to me, at least.  

Other ways we use it are for pulled pork loaded baked potatoes, quesadillas, tacos and green chile stew.  We also eat it in a cold sandwich with mayo.  North Carolina style bbq is especially good in a cold sandwich, IMO.

For tacos, I like to reheat it by lightly frying it in a skillet with a little bacon grease.  Tastes like smokey carnitas!   I don't sauce my pulled pork, though . .if you do, this might be a little messy, lol.
