Chuck roasts and Boston butts on sale at Winn Dixie this weekend. Smoking the money muscle and tube end of the butt and grinding the rest for Adkins farm sausage. Everyone in the path of Barry be alert and stay safe!

Got a potluck tomorrow. Duck and sausage gumbo with rice and crusty sourdough of course.
 
oh yeah I am also making some Elotes! that pic just makes me have to try them

I made some a couple days ago and the stuff is out of this world good. Follow xray's recipe and use the cojita cheese and you wont be disappointed!
 
I think the wife picked up Queso Fresco... not real up on my mexi cheese. will that work?
 
I injected an eye round of beef for Saturday. DE boned 5 lbs of chicken thighs to make Richie s chicken Italian sausage while the beef smokes . Put the rest of the thighs in pops brine to grill on Sunday .
 
Some chicken thighs and maybe a rack of ribs.
Thinking of doing 50-75 thighs...pulled chicken.
 
smoked 5 pounds of salmon today and it turned out great. Roasted all sorts of veggies over charcoal too

Smoked deviled eggs. Jeff's pigshots. Pork loin roast bone in. All done on big chief and finished in the oven except the deviled eggs.
Ate pigshots and deviled eggs with home grown green beans, corn on cob, cuccumber and tomato salad.
Will let pork loin rest overnight b4 putting in crockpot on low to take to a church pot luck tomorrow.
 
the Elotes corn is out of bounds good! Brisket turned out real good. Home ground burgers tonight, BB bacon wrapped chicken tomorrow! half way through the long weekend.
 
I’m having a lazy day today, before I head back to work after my 2 week vacation.

I’ve got one rack of ribs on the go right now. I didn’t even bother setting up my thermometer or temp gage. I’m just trusting my instincts and hoping for the best.
