started after sunup smoking a cheap shoulder. i rubbed it yesterday morning and injected some other funky things into it before smoking. the rest of the "funky things" are a glaze after mixing with honey. plan is to run the smoker for several hours then toss it on the grill wrapped up good to temp it.

the "funkys" dales oyster sauce and thick sweet soy. its an experimental sacrificial shoulder if you will. no party, wife workin this weekend, a just for fun cook. i mean the thing cost me 7$ so thats cheap entertainment, as the old folks used to say.

after 2 hours at 250*. no where near probe time or glaze.

oh and another abnormal thing tossed into this is the wood. chunks of mesquite fill the wood sauna this morning. i usually use apple and hickory or maple. so we will see where this all lands on the tongue, as abnormal as it is. :)

thats all the pile it needs to run that hot in summer. same chamber advantage on the fuel. i walk away also. it doesnt take fooling with because its dampened down so cant flame up.

indeed thats why i started early! humidity a killer here after 11am.
 
end result was great. nothing was over powering even the mesquite. i wrapped it up after 4 hours in the smoke. placed it in the oven in a pan with some water @300. killed the heat in oven when it got to 190 and ran to store. when i got back it was still 193* internal. removed it and set on counter 20 min. broke it open and chowed down.

tried a Marzetti's clone slaw recipe and it was spot on! im gona have some huge farts later. lol
if you like Marzetti's try this.
2c mayo
1/4c vinegar(i used acv)
2TBS mustard
2/3-1/2c powdered sugar(i used 1/2)
1/4 tsp each- onion powder, garlic powder, salt, and pepper(those ingredients i added to it)
1 large head of cabbage

set in fridge over night for best juices! ill never buy a mix again.

Nice looking pork. Sounded like it would come out on the sweet side considering the oyster and sweet soy sauce, but it sounds like it came out fine. Good job!
