Last weekend I decided it was time to try the old meat grinder I found in our shed out. It hadn't been used in 40+ years.
It worked pretty well and I was able to grind through about 40lbs of pork butt and 15lbs of beef roast that I had in the freezer. I wanted to get some different recipes mixed up Friday night but after getting everything ground I was cold and tired.
 
Last Saturday morning we mixed up some summer sausage and snack sticks with Leggs seasoning. A friend bright 5lds of venison that was used in some summer sausage. Sorry no pictures of grinding or stuffing my hands were full.
I must say the pulled pork summer sausage was the best. We did 2 different snack stick recipes and 4 different summer sausage recipes.

 
So finally this past Friday I was able to mix the meat up that I wanted to use for Lebanon bologna. Stuffed it in some Muslin bags. I used the recipe that CFarmer had tried a little while back. The only thing I did different was cut some of the honey and added brown sugar. I also did 5lbs without any sweetener.

Smoker was pretty empty with only 10lbs in it.

I think I should have used more buttermilk it wasn't very tangy
 
I would have done all of these post at once but it seems like when posting from my phone it works best to keep them smaller.

Sorry admin if I should have done these post separate or put them somewhere else. I am still trying to figure out how things need to be done.

Thought I would throw you another picture.


I had some charcoal going in the grill to try the different recipes before stuffing. The wife came out after we ate the samples so I made this special paddy for her.
