Hit Sams on Thursday and got a 13lb prime brisket and a 9lb prime brisket point.
Also got some Drumsticks to try out lollipops and some chicken thighs to make some cupcakes. The Briskets took about 18 hours on the Yoder Ys640 at 240 (it was 28 degrees overnight). Put the Briskets on at 11PM and wrapped when I woke up at 7AM, done at 4:30PM
So frenching those drumsticks wound up being quite and adventure:) it took me like an hour to prep and pull all those tendons out with needle nose pliers. I hit them with “The BBQ rub and wrapped with bacon, cooked them for 2 hours at 250.
The chicken thighs were marinated overnight in Sofrito and Adobo. I made Pickeled onions and served those on hamburger buns.
