It's so much funner catering your own wedding than hiring someone else to do it !

Yesterday I rubbed down two fine racks of Babybacks with a generous dose of Bone Suckin' Sauce Rub for today's smoke


Got em in the smoker nice and early ( 6:30 a.m. ) as I had to work at 2 today. Used cherry wood chips with a chamber temp of 200*.

Here's a shot of almost 3 hours in before I foil wrapped them. Gave them a very light brush of BBQ sauce before I wrapped em.


I planned to smoke them another hour or so after 2 hours in the foil but had to run an errand so that part never happened.

Howeverrrr.......... here's the final result.  These were cooked to be vac packed and stored in the freezer until my wedding in July.  I

couldn't resist and dedicated one 1/2 slab for tonight's dinner.  In my opinion they are perfect and missed not a thing from not having the last hour. Amazing flavors, allllmost but not quite falling off the bone,  The Lady of the house and the Grandbaby were super pleased also and that counts for much !

Great idea catering your own wedding. How much are you charging yourself?

As to the bb ribs, nice job!! I've found 5 hours to be enough time in the smoker to keep some bite to the meat, yet still plenty moist and tender.

And most of all, CONGRATZ on the upcoming wedding!!!
