Waterfowl gumbo

Made a batch of waterfowl gumbo.
Started with ducks, and picked them clean.

Seasoned and threw on the smoker for a couple hrs

Threw them in a pot and simmered till fall of the bone tender

Made a roux

Deboned the ducks and added some goose sausage along with the roux, trinity plus the pope…..

neither of the stores had file’ so I guess I gotta order some, so added some okra when it was almost done. Served over rice and with cornbread, and hotsauce. Thanks for lookin!
