I was thinking of making gumbo with Frozen Cleaned Blue Crabs. I never had blue crabs before. Are the crabs hard to eat coming from the gumbo? I can tear up some snow crab but not sure about these or if its worth it to use them?

You can literally put anything in gumbo. Since your crab is "ready to cook", it's only going to take a few minutes at the end. The backs might take a little work. One of your biggest decisions is going to be how dark of a roux do you want.

I've only had blue crabs steamed live and they're damn good but I know that doesn't really help you.
